Gina's Spectacular Spanikominestra (Spinach Stew) Ingredients: 3 Tbsp Olive Oil (or more) 1 Onion - chopped 3-4 cloves Garlic (think Dracula!) 1 pkg. Frozen, chopped (or 1/2 bag (?) of the fresh stuff) 2 x 28 oz cans Tinned tomatoes (diced and spiced is nice) 3 cups Ourzo (rice shaped pasta, add more if necessary) 1-2 Bayleaves To taste: Salt and pepper, leafy green herbs (fresh or dried, as you wish - I use basil, oregano or thyme) 2 cups Water -- Saute garlic and onion in olive oil over low-medium heat Add the tomatoes and bring to a boil Lower heat and add spinach and ourzo Add bayleaves, salt, pepper and herbs Let simmer for approx. 20 minutes. Stir often, otherwise the mix has a habit of sticking to the bottom of the pot. Also, be careful not to keep the heat too high - again, sticking problems! Add water, as necessary, to the broth. You want the finished product to be thicker than a soup but not as thick as lasagna! Enjoy. You may wish to add the herbs and seasonings with the oil, onion and garlic to extract/add more flavour. Also, you might want to add some butter or more oil since this a very low-fat recipe and may not carry the flavours that far.
